As a rule of thumb, reserve as soon as your ready! This is going to vary event to event and person to person. If your set on a date, the earlier the better.
There is no right or wrong answer here. Availability on specific dates can range from 1 month to over a year.
The good news is that you can secure your date at any time with a 25% deposit.
